Herb Crusted Rack of Lamb
Cook time: 30 minutes Rest time: 5-10mins Prep time: 15 minutes
Serves: 6 (half the ingredients to serve 3)
Ingredients:
2 Racks of Lamb
2 tablespoon Dijon Mustard
150g Breadcrumbs
2 teaspoon Rosemary
1 teaspoon Mint
4 teaspoon Parsley
3 teaspoon Thyme
Salt & Pepper
Method:

Season your lamb with salt & pepper and rub some olive oil into the lamb. Brown your lamb in a hot pan on all sides to lock in the flavours. Then leave to cool.

Meanwhile combine your herbs and breadcrumbs in the blender and add salt and pepper, mix all together in the blender.

Once the lamb has cooled spread the mustard over the racks of lamb and press the bread crumb mixture on the lamb.

Place the lamb in the preheated oven at 180 degrees for 30 minutes. This will have the lamb cooked to medium if you like it more or less you may need to adjust the timing.

Remove the lamb from the oven and let it rest for 5-10 minutes.
We like to serve the lamb with some roast potatoes (and mash if you’re feeling it), carrots and mangetout with some gravy.
